stretching a ham

Several stores have ham on sale right now for $1 a lb. or less. You can really get a lot of mileage out of the leftovers:

Ham & biscuits for breakfast

Hash Brown Ham Quiche

Add the ham bone to a 15-bean soup mix

Add all the little leftover bits to homemade macaroni & cheese

and my favorite recipe for using up extra ham:

Cheesy Ham & Potato Soup
12 potatoes, peeled & cubed
1 lg onion, finely diced
1 clove garlic, crushed & finely diced
1 lb velveeta, cubed (2 if you want it extra cheesy)
1 lb cubed ham
3 ½ T flour
1 c. milk
black pepper to taste

Place potatoes, onion, garlic & ham in a large stock pot. Cover with water. Cook until potatoes are almost tender. Remove 1 cup of potatoes & mash in bowl with fork. Add some liquid from pot (1 T. at a time) along with flour until you have a thick paste. Add back to pot. Add cheese to soup & let simmer until cheese melts. Stir in milk & add pepper to taste.
Serves at least 8.

    ohhh that soup recipe sounds sooo good!!
    I’ll have to give this a try!

    I just finished up a whole ham with my family. That thing lasted for five meals for my family of seven! I cut some up and put it on pizza. I added it to salads, and even to eggs. We also just had it plain along with some augratin potatoes.

    Well, I love sandwhiches! Ham and Cheddar Cheese Panni Sandwhich is my favorite!!!

    Ham and Beans

    Hot Ham Cheddar Crescent Rolls…hum..so good.. sliced ham, with cheddar cheese between crescent rolls ( I use 2 triangles, one on top of the other) and add spicy brown mustard and bake in oven for 20 to 25 minutes at 350.

    Oh anything sounds good to me….=)

    Probably stromboli here. A can of pizza crust spread out on a cookie sheet. Top with ham and your choice of cheese. Fold over and seal and bake! Yummy!
