sour cream choc chip muffins

I made these for breakfast this morning and they are deee-licious!! (I add flax seed & wheat germ.)

Sour Cream Chocolate Chip Muffins

5 tbsp. butter, melted and cooled

2/3 cup sugar

1 tsp. vanilla

1/4 tsp. salt

1 cup sour cream

1 large egg

3/4 tsp. baking soda

3/4 tsp. baking powder

1-1/2 cups flour

3/4 cups mini chocolate chips

.

1. Preheat oven to 350º.

2. Combine butter, sugar, vanilla, salt, sour cream and egg; mix well. Stir in baking soda and baking powder. Add flour and stir until well combined; stir in chocolate chips.

3. Fill paper-lined or greased muffin cups 3/4 full. Bake for 18 minutes or until done. Cool. Yield: 1 dozen.

I saw this fun little meme & thought I would play along.

A is for age:

B is for burger of choice:
Cheeseburger with mustard, pickles & onions. I promptly take the onions off when I get my burger because I love the flavor but hate the crunch- yes, I know that’s weird.

C is for what kind of car you drive:
Silver 2006 Kia Sedona minivan

D is for your dog’s name:
We have 4 Catahoulas – Ceili (pronounced Kaylee, it’s an Irish dance), Houdini, Speckle & Piglet

E is for essential item you use everyday:
My glasses

F is for favorite TV show at the moment:
Lost!!!

G is for favorite game:
To play – Scattergories,  To Watch – Football

H is for Hometown:
Somewhere in Texas

I is for instruments you play:
Clarinet loooong ago

J is for favorite juice:
Orange

K is for whose butt you’d like to kick:
Cancer

L is for last restaurant you ate at?
Chan’s (Chinese)

M is for your favorite Muppet:
Grover

N is for Number of Piercing:
2, one in each ear

O is for overnight hospital stays:
5 kids

P is for people you were with today:
My kids and our homeschool group (later today)

Q is for what you do with your quiet time:
Read 3 chapters a day in my Bible, read friends’ blogs

R is for biggest regret:
Not saying anything out of a fear of saying the wrong thing

S is for status:
SAHM

T is for time you woke up today:
6:50

U is for what you consider unique:
My kids

V is for vegetable you love:
Corn on the cob

W is for worst habit:
I pick something up to put it away, get distracted and set it down somewhere, then have no clue where it is!

X is for x-rays you’ve had:
do sonograms count?

Y is for yummy food you ate today:
Nothing yet, but for dinner we are having pasta with bell peppers, onions, garlic & italian sausage

Z is for zodiac sign:
Capricorn

free homeschool supplies

Our local schools have paper recycling bins in the parking lots for newspaper, magazines, etc. This time of year can be a goldmine as teachers are cleaning out their classrooms. I discovered this little tidbit last year as I was dropping off my newspaper around the last week of school. The recycling bin was full of unused school items! I got a big stack of Kindergarten worksheets, several Language Arts workbooks, some science workbooks, and two huge unopened boxes of bookcovers – my kids have drawing paper for the next several years!

heartbreaking news

Tragedy hit the family of Steven Curtis Chapman yesterday as they lost their daughter Maria in an accident. It is one of every parent’s nightmares. Please lift them up in prayer, especially their teenage son.
