the homeschool lunch line

Lunchtime on school days can get a little dull around here. Too often we resort to everyone fending for themselves and that gets boring.

I am going to try assigning certain foods to certain days so that we have a good variety every week. I will cook extra with evening meals so we can use the leftovers for lunch (taco meat, for example).

This list is just a brainstorm of homeschool lunch ideas. Not listed are side options: salad, fruit, veggie sticks, yogurt, applesauce, raisins, etc.

{Monday}

  • We have a relaxed schedule on Mondays so it is a Whatever day.

{Tuesday}

  • hot dogs (Oscar Mayer Select w/no nitrates or nitrites)
  • frito pie
  • chili
  • brown rice
  • stuffed baked potatoes
  • sausage wraps
  • pizza pockets

{Wednesday}

  • spaghetti
  • chicken parmesan
  • buttered pasta w/garlic & parmesan
  • macaroni & cheese
  • fish sticks
  • popcorn chicken
  • popcorn shrimp
  • cheese ravioli (frozen)

{Thursday}

  • nachos
  • tacos
  • chicken quesadillas
  • tostadas
  • burritos
  • carnitas

{Friday}

  • subs
  • pitas
  • grilled cheese
  • make-your-own lunchables
  • BBQ sandwiches
  • PB&J
  • summer sausage, cheese & crackers
  • soup & bread

wfmw – make an online cookbook

Have you heard of LiveBinders? It is a free online notebook, and I am having lots of fun with it!

I created a cookbook binder to gather up all our favorite online recipes. I use Delicious to tag and organize all the yummy recipes I find while browsing bloggy world, but I wanted an easy way to access the ones that we have tried & liked. I just did a very simple cookbook, but you can create as many tabs as you want.

The wonderful thing about LiveBinder is that you can view each webpage in your binder. It is as simple as entering the link you want to display. I have a button in my browser toolbar that easily lets me tag a website . (You can find instructions for that here.)

You can also browse other people’s binders. I have found some great resources for our next school year this way.

I will be sharing some other ways I use LiveBinder soon, so stay tuned.

Monday ~ Chicken Spaghetti

Tuesday ~ Salsa Verde Beef

Wednesday ~ Chicken Pot Pie

Thursday ~ We are eating pizza at our church game night, but taking Baked Ziti to some friends with a sweet new baby.

Friday ~ Tacos

Baked Ziti

1 small onion finely diced

2 t olive oil

1/2 c tomato paste

1 can tomato sauce

2/3 c water

1 t oregano

1 t basil

1/4 t salt

1/8 t pepper

1 c ricotta cheese

8 oz shredded mozzerella cheese

8 oz ziti cooked & drained

Saute onion in olive oil until translucent. Add next 7 ingredients. Cover and simmer over medium heat for 10 minutes. Oil a 1 1/2 quart dish. In a large bowl combine ricotta and half the mozzerella. Add ziti and half the sauce. Mix gently and pour into dish. Top with remaining sauce and cheese. Bake at 375 for 25-30 minutes or until cheese  melts.

what’s cookin’

As soon as the weather turns warm, I get in the mood to cook real food again. Maybe it is all the fresh ingredients available, or the longer days.

I’m spending the afternoon printing out new recipes to try. Here is what’s on the menu so far:
