wfmw – what do i fix?

Today’s WFMW is “the What Do I Fix? Edition” We are sharing recipes that are simple to fix for those crazy days that sneak up on you. I’ve got a few that I fall back on when it gets hectic…..well, more hectic than usual, that is!

Cheesy Chicken
2 lb. boneless skinless chicken tenderloins
2 c. cheese crackers, crushed into fine crumbs (I use food processor)
1/2 c. butter, melted
1 t. garlic salt or powder
3-5 drops Tabasco sauce

Combine melted butter, garlic salt & Tabasco sauce. Dip chicken tenderloins in butter and roll in cheese cracker crumbs. Place on cookie sheet or shallow baking pan & drizzle any remaining butter over the top. Bake at 375 for
20-25 minutes.

Sausage Pie
I tried a Betty Crocker recipe years ago called Easy Cheeseburger Pie. We did not like it at all, but I modified that recipe to create this easy breakfast casserole. My kids were little bitty at the time and named it Sausage Pie.

1 pound hot breakfast sausage
1 c. baking mix (like Bisquick)
2 c. milk
4 eggs
1 ½ – 2 c. shredded cheddar cheese

Cook sausage until brown; drain & spread in greased 9×13 baking dish. Sprinkle with cheese. Mix together eggs, milk & baking mix. Pour evenly over sausage & cheese. Bake at 400 for 25 minutes.
Good served with fried potatoes.

Simple Salisbury Steak
1 egg
1/3 cup dry bread crumbs
1 can condensed cream of mushroom soup, undiluted, divided
1/4 cup finely chopped onion
1 pound lean ground beef
1/2 cup milk
1/4 teaspoon salt
1 1/2 cups sliced fresh mushrooms

In a bowl, combine the egg, bread crumbs, 1/4 cup soup and onion. Crumble the beef over mixture and mix well. Shape into six patties. In a large nonstick skillet, brown the patties on both sides; drain.
In a bowl, combine the milk, salt and remaining soup; stir in mushrooms. Pour over patties. Reduce heat; cover and simmer for 15-20 minutes or until meat is no longer pink.

Chocolate Oat Squares
I always have these ingredients on hand, so this is the recipe I pull out when I remember at the last minute that I’m supposed to take a dessert somewhere. Everyone loves them!

1 ½ c. flour (I use whole wheat)
1 ½ c. old-fashioned rolled oats
1 c. firmly packed light brown sugar
½ t. baking soda
½ t. salt
¾ c. butter (1 ½ sticks), melted
1 c. semi-sweet chocolate chips

Preheat oven to 350. Grease a 9×13 pan. Mix together flour, oats, brown sugar, baking soda & salt. Pour melted butter over flour mixture; stir until well combined. Spread into pan. Pat into an even layer. Bake until lightly browned, 15 minutes. Remove from oven & immediately sprinkle chocolate chips evenly over bars. Let sit for about 5 minutes & then spread melted chocolate. Cool completely before cutting.

wfmw – backwards day

It’s time for another WFMW Backwards Day. Instead of giving great advice, you ask for it.

We are hoping to put our house on the market after Christmas and we are considering selling it ourselves. Have any of you successfully done this? Was it worth it? What do’s/don’ts can you share? We are in a small suburb that is booming, so the housing market is not as slow as other parts of the country. We also have a good amount of equity so we can offer a good price to get out quickly (we already have our eye on another house).

wfmw – holiday scented laundry

Last week I shared how I scent my home for the holidays, so this week I thought I would take it a step further – the laundry!

I’ve been a loyal Downy user for 15 years, so last summer when I received a free sample of Snuggle Wild Orchid & Vanilla Kiss I just stuck it up on the shelf. One day last October I ran out of Downy so I tossed in the Snuggle sample. I could not believe how yummy the laundry smelled as I took it out of the dryer – it smelled just like Bath & Body Works Warm Vanilla Sugar products!!

We had our first cool spell this week so I ran to the store yesterday to get my Snuggle. (Don’t worry Downy, I’ll go back to you in January, I promise!)
